Welcome to the Don Pablo’s Web site, home of the Real Enchilada®. As an original Mexican restaurant serving traditional food, we see authenticity as muy importante. Our recipes are prepared fresh, on-site, to ensure the best-tasting Mexican food north of the Rio Grande. But, as you will soon see, creating great Mexican food requires the right recipe.

Mexican cooks working on ranches at the turn of the century created foods for the range-roving cowboys. Their staples included pinto beans, tortillas, rice, cheese (usually from goats), and all ingredients that were easy to find or grow, easy to store, and easy to transport.

The Mexican cooks would use cuts of beef and marinate it, grill it over Mesquite wood, or let it simmer in a stew until tender and use it for enchiladas.

Don Pablo’s recipes originated from direct descendants of the celebrated Mexican ranch cooks.

In 1985, we took our time-tested recipes and opened a restaurant called Julio’s in Lubbock, Texas. The restaurant was modeled after Mexican architecture, complete with a Mexican plaza and fountain.

The festive environment within the walls of the restaurant, made customers feel like they were stepping into Old Mexico. Mama’s Skinny Enchiladas, Steak Tampico and the B&B; Burrito became favorites among customers. But, more than anything, it was the chips, salsa and margaritas that brought people back to Julio’s again and again.

In the spring of 1986, Julio’s was renamed Don Pablo’s Mexican Kitchen. Some say Don Pablo was a famous Mexican war hero. Others insist he was an inspirational poet from Huatulco. But, no one really knows. The legend of Don Pablo may always remain a mystery.

Nonetheless, Don Pablo’s was here to stay. And, after mucho success in Lubbock, Don Pablo’s expanded to the Dallas/Fort Worth area in 1987.

By 1990, they had opened six restaurants in Dallas/Fort Worth. And, enchilada lovers all across North Texas were stopping in to join the fiesta.

In 1992, stomachs across America began rumbling, calling out for the delicious Mexican food and atmosphere of Don Pablo’s. Indianapolis then became home to the first Don Pablo’s outside of Texas. But, that was just the beginning.

In 1993, DF & R, our former company, went public and traded stock on NASDAQ. Don Pablo's became a division of Apple South, Inc. in the Fall of 1995. In 1998, Apple South became AVADO Brands.

Today, there are more than 120 Don Pablo’s restaurants located in over 20 states. This number continues to rise. With our rapid expansion, Don Pablo’s has become the standard for Mexican food throughout the nation.
